Banana ice cream - What to do with overripe bananas


I had four bananas about to go bad.  Emma had a play date with her friend who is also vegan.




Take bananas and roughly break them up.  Mine were so soft that they just kind of fell into the processor when I took off the peel.



Puree them.



Transfer them to a bowl and freeze.  After a couple of hours, you have banana ice cream.  I count this as 2 WW points plus per serving since the banana was pureed.  And if you can fool two 3 year old girls with this dessert....

Coconut sticky rice mango - 6 Weight Watcher Plus Points

I love mango coconut sticky rice.  And was running low on Weight Watcher points.




1 can of light coconut milk
1/4 cup of Agave nectar
2 packages of ready to eat Sticky rice
1 or two mangos




Warm up the coconut milk on medium low.  Do not boil and dissolve the agave nectar into it.  This took maybe 3 or minutes.  The longer you cook it, the more caramel the flavor becomes.  Heat up sticky rice according to package.  Pour coconut milk mixture over rice.  I used 2 packages of rice.  You can serve this warm or cold.



In the picture above, I used a whole mango and garnished with a lime.  I ate this hot and then put some in the fridge after I cooled it down.

1 cup = approx 6 WW Points Plus
4 for the sticky rice
2 for the coconut
I got zero for the agave nectar.
Mango is free.

Custom Dress

Custom dress for a lovey friend.  Her and her boyfriend lives states apart and only see each other every two months.
